Baked Honey Mustard Salmon with Virginia Peanuts

  • 1/4 c. butter, melted
  • 3 tbsp. Dijon or horseradish mustard
  • 1 tbsp. honey
  • 1/8 c. dry bread crumbs
  • 1/8 c. Blue Crab Bay Co.® peanuts*, coarsely chopped
  • 1 tbsp. Blue Crab Bay Co.® Salmon Seasoning
  • 4 4-oz. salmon fillets
  • Salt and pepper
  • Lemon for garnish
Preheat oven to 400 degrees. Combine butter, mustard, and honey in a bowl. In a second bowl, mix bread crumbs, chopped nuts, and Salmon Seasoning. Glaze the fillets lightly with the honey-mustard sauce, then sprinkle the crumb-nut mixture over the fillets. Bake for about 15 minutes or until fish flakes easily. Salt and pepper to taste, and garnish with a slice of lemon.
